Tonight’s class will feature some accessible, delicious dishes redolent of the bright, fresh, seasonal flavours of the Maghreb. Guests will use cumin, cinnamon and saffron in a simple lamb kofta tagine, and will use preserved lemons, Mediterranean green olives and harissa paste to prepare a “pieds noirs” potato salad. We’ll serve these with chef Tara’s bulgur with fresh herbs. The evening will start with roasted pepper and goat cheese canapes, and we’ll end the evening with a dessert prepared by Corner Peach. Dietary considerations: this menu contains dairy and gluten.
